For our version of Black is Beautiful, VBC will take the original open source Imperial Stout recipe developed by Weathered Souls, and blend Waypost Imperial Stout vintages aged for 12 months in Apple Brandy barrels and Willett Bourbon barrels to showcase flavors coming together from across the country. The Cellar Circus is a new oak barrel-fermented permutation series. This is a thoughtful experiment in Brett Farmhouse Ale recipes fermented directly in 11 Red and 11 White Wine Oak Barrels with a five-variety fusion of Saison yeast and Brettanomyces. This beer was brewed in December 2017 and bottled one year later, spending the next 6 months conditioning.
Blending from unique, individual red and white wine barrels creates a litany of flavors amplified by almost a year spent fermenting directly in wood. Sweetness from the oak barrels is immediately followed by aromatics produced by the estery qualities of a Saison and delicate use of a variety of hops. Upon further investigation, the character instilled by the use of Brettanomyces during fermentation produces a complementary fruit-forward aftertaste with a clean, dry finish.

Old school hop additions (with just enough West Coast bite) in a smooth, boozy 8.0% abv Double India Pale Ale. Pairs well with turf ‘n’ turf (aka, a 16-ounce T-bone and a 24-ounce porterhouse). Also, whiskey and a cigar. Preferably consumed at the same time.
Virginia Beer Company avoided overanalyzing this recipe by deciding to pair the classic bright orange and tropical notes of Citra hops with the ripe pineapple flavors and aromas of Sultana hops. The result is a hazy, unfiltered IPA with the slightest hint of bitterness to round out the juicy hop profile.
