Bellissimo is an homage to a special type of Pilsner first introduced by Agostino Arioli, the founder of Birrificio Italiano near Lake Como, Italy. Unlike traditional German or Czech-style Pilsners, Italian-style Pilsners are unique in that they are dry-hopped with German noble hop varieties that feature spicy, herbal, and floral aromas, imparting hop aroma while not increasing bitterness. Bellissimo Italian-style Pilsner is based on German malts and classic Lager yeast. Five weeks of cold conditioning results in a crisp, malt-forward Pilsner base complemented by the floral hop aromas produced by the aforementioned dry-hopping process. One of the reasons VBC chose the name “Bellissimo” is that we find Italian-style Pilsners to be a very beautiful take on the Pilsner style. A collaboration with Williamsburg pizzeria Bellisimo Pizza.
A kettle-soured berliner weisse lightly complemented with Centennial hops and finished with luscious additions of Raspberry purée (1 lb. per gallon). Soft and pleasingly tart with a brilliant ruby hue. Additions of flaked oats & golden naked oats add a mellow, fluffy, hazy body to a flavorful recipe that doesn't let up on our love of lupulin. The release each spring of Waypost Anniversary Imperial Stout marks The Virginia Beer Company's anniversary. A limited amount of this 10.4% luscious liquid makes its way into a rotation of barrel-aged bottle releases to help mark the occasion. Launched by our friends at Weathered Souls Brewing Co., Black is Beautiful is a collaborative effort amongst the brewing community and its customers, in an attempt to bring awareness to the injustices that many people of color face daily and to show that the brewing community is an inclusive place for everyone. For our version of Black is Beautiful, VBC will take the original open source Imperial Stout recipe developed by Weathered Souls, and blend Waypost Imperial Stout vintages aged for 12 months in Apple Brandy barrels and Willett Bourbon barrels to showcase flavors coming together from across the country. We stand with our colleagues, our friends, and our neighbors; and we will do what we can to lead by example."
The Cellar Circus is a new oak barrel-fermented permutation series. This is a thoughtful experiment in Brett Farmhouse Ale recipes fermented directly in white wine oak Barrels with a five-variety fusion of Saison yeast and Brettanomyces. This beer was brewed and fermented for over a year and bottled in April 2019, spending the next 6 months conditioning.
Blending from unique, individual white wine barrels creates a litany of flavors amplified by almost a year spent fermenting directly in wood. Sweetness from the oak barrels is immediately followed by aromatics produced by the estery qualities of a Saison and delicate use of a variety of hops. Upon further investigation, the character instilled by the use of Brettanomyces during fermentation produces a complementary fruit-forward aftertaste with a clean, dry finish.
