Kölsch-Inspired Farmhouse Ale

Malt: Bohemian Pilsner, Weyermann Munich
Hops: Northern Brewer, Czech Saaz

Final Entropy is a reinterpretation of the classic Kolsch style ale. Through inspiration and collaboration, Jester King Brewery and Jackie O’s have gently coaxed this style into a playful eccentric. Primary warm fermentation with a house mixed saison culture, then lagered for 5 weeks at cool temperatures. Unfiltered, unpasteurized, and 100% bottle conditioned.

Coffee Stout

ABV: 6.5%

Malt: 2-Row, White Wheat, Cara Pils, Munich, Special B, Chocolate Malt, Roasted Barley, Black Malt

Hops: Northern Brewer, Willamette

Adjuncts: Lactose, Coffee Beans

A caramel centered stout accentuated by Ridge Runner French roast coffee. Instead of simply adding coffee to a stout, we build a stout around the coffee. Course-ground coffee beans are added in the conditioning tank. The beans add a robust roasted character and turn this stout fully opaque.

Bourbon Barrel Aged Chocolate Raspberry Stout Finished on Madagascar Vanilla Beans

Bitterness: 55 IBU

A dessert beer to the core, our Raspberry Stout is truly a feat in decadence. Loads of chocolate malt, cacao nibs, and local, late season red raspberries from Agriberry Farm all contribute to what would best be described as a raspberry truffle in liquid form. After months of patient maturation in freshly emptied bourbon barrels, our Raspberry Stout is finished on Madagascar vanilla beans revealing a confluence of smooth, rich dark chocolate, ripe red raspberries, and real vanilla.

Bourbon Barrel Aged Milk Stout with Ginger, Cinnamon and Honey

Hardywood Gingerbread Stout, described by BeerAdvocate as “freagin’ Christmas in a bottle,” is an imperial milk stout brewed with vanilla beans, cinnamon, fresh Casselmonte Farm baby ginger and Bearer Farms wildflower honey. Gingerbread Stout is then matured in Virginia bourbon barrels, where it adopts an incredibly mellow character with oak, caramel and bourbon undertones, and emerges 12 weeks later as Bourbon Barrel GBS. A festive blend of spice character laces this rich, chocolatey stout, which warms the palate and the soul.
